Amaranth plants can grow up to 2 meters tall, with thick oval leaves that occasionally have pointy points. The central stalk of the Green variant sprouts a seed-filled, fluffy lime-green bloom. Despite being edible, flower buds should not be eaten once they have grown and become bushy. When young, the leaves are mildly astringent when uncooked, similar to spinach. Similar to chard or beet greens, larger, more mature leaves are preferable for stewing or braising.
Nutritional Value
They are genetically more closely related to their wild predecessors, amaranth leaves are a much better source of carotene, iron, calcium, protein, vitamin C, and essential minerals than beets, Swiss chard, and spinach.
